Sweets & Seeds

Last week was birthday week around our house with Matt's on the 20th and mine on the 25th. Birthdays are my favorite. No, really. I love cheesy birthday cards, balloons, and sweet little voices calling out, "Happy Birthday, Momma! I got a so-pize for you!"
My plans to make a fancy cake for Matt fell through, but I must say that Plan B turned out to be a rave!
Let me introduce you to my newest addiction...I call them Chocoholic's Delight Cookies.

The best part? They are made with a simple cake mix, plus a few of your staple ingredients. You MUST make these as soon as possible. I promise, you won't be disappointed! 

Chocoholic's Delight Cookies Recipe:
Ingredients:
1/2 cup butter
1 egg
1 Tablespoon oil
1/2 teaspoon vanilla
1 box dark chocolate cake mix
1 1/2 cup dark chocolate chunks
1/2 cup Nutella

Directions:
1. Preheat oven to 350 degrees.
2. Beat butter until smooth. Add egg and beat again until incorporated. Add oil and vanilla and beat until combined.
3. Add cake mix in batches and beat slowly after each addition until just combined. Add Nutella and beat until just combined.
4. Stir in chocolate chunks. Roll into balls and place on a baking sheet a few inches apart.
5. Bake for 7-10 minutes until tops are just set (not wet looking anymore), the cookies are evenly flattened, and starting to get cracks in them. Remove from baking sheet and let cool for a few minutes before serving.

On a tad bit healthier note...along with being a year older, we're now gardeners too! We've been wanting to start a veggie garden for a while now and we finally found a day to make it happen. Matt braved the frigid weather and spent the morning building these raised beds from some scrap wood we had. They look awesome!

During nap time, I headed out to gather the soil & seeds. And yes, I loaded all of it by myself, no thanks to the able bodied teenage cart collector who lounged on a row of carts watching me the entire time. I needed the workout anyway.




 Beds are built. Now, to plant the seeds!
